
Did I tell you that I am trying to eat healthier? Well, I started this journey in February when my daughter got a Breast “C” diagnosis. My sister Deb and I always do the Daniel’s Fast during the beginning of the year and had just finished it when I joined my daughter’s journey to help keep her arms raised, praise God!
As you probably know, cancer thrives off sugar, so that was one of the first things we discontinued. In addition, we have gone dairy and Gluten free. From my research of recipes to support my desperate desire for something sweet, I chose to make my original recipe of Ms. Fields Chocolate Chip Cookies using Whole Earth, a plant-based sugar alternative, Almond Flour and Dark Chocolate Chips. They were not as pliable as my original Mrs. Fields Chocolate Chip Cookie recipe, but it solidified my need for something sweet! I shared these cookies with my Life Coaching Group, and they offered a thumbs up, even going back for seconds and thirds, thank God.
Moving forward, I am on a roll, seeking ways to master my sweet tooth without too much of that sweet goodness. I had my Life Coach group over for lunch and decided to make Peanut Butter Delights, many believed that it seemed like fudge, however, that was not the consistency I was looking for. Therefore, I think I need to experiment with that recipe a little more. Has anyone tried a gluten or sugar free peanut butter delight recipe that you have mastered? I would love to get your recipe!
There was a Vendor Sale at the Senior Center a couple weeks ago and this lovely lady shared that she uses a Gluten Free Flour that allows her to make all the wonderful things she did with the regular wheat flour, whoa…even biscuits! The label states, “Use this astounding blend in place of wheat flour in your favorite recipes for cookies, cakes, brownies, pancakes, pies, muffins and more” yes, this is what I have been looking for, thank God, especially since the holiday season is approaching us.
This final amazing batch of cookies were made using Bob’s Red Mill Gluten Free 1-to -1 Baking Flour. I was unsuccessful in locating it at Wal-Mart but was able to purchase it on Amazon. When I made my favorite cookie recipe, I use the normal ingredients like salt, baking soda, oats, baking powder and add additional ingredients like plant butter and Monk Fruit Sweetener. The consistency of this cookie was smooth! Some of the individuals in our Writer’s group gave me the thumbs up to go ahead to share this recipe with others.
Call to action is to continue living life and doing everything in moderation. That is the message my daughter and I are adhering to; we must not stop living life to the fullest but be cognizant to and listen to our bodies and share with others what we learn.
